Civility FAIL

The president gave a speech last night.  I didn’t watch it.  I need to be able to read the synopsis of political speeches these days because I can’t quite stomach the queasy feeling I get half the time.

And so, I missed the moment everyone’s talking about this morning: South Carolina senator Joe Wilson yelling, “You lie!” when President Obama said that his vision for reformed health care wouldn’t cover illegal immigrants.

I find myself in a quandary here.  I’m not entirely sure where I stand on health care reform (yes, the system is broken, and I am mystified by people who think that a government run plan will be more of a burden than a privately run one, apparently on the basis that it’s more “American” to have corporations do it, because corporations are never, ever evil), but I know where I stand on this.  (And if you don’t know, you clearly didn’t read my post from Monday).

The New York Times, in its fact-checking recap of the president’s speech (interesting read), points out that the president is speaking true on this point (and most others … although some of them need to be read creatively).

I keep going back to this: W. was president for 8 years.  He stood up in front of Congress year after year and bragged about how well the war on terror was going and how Iraq was always under control.  Did anyone stand up and yell, “You sent our men and women to fight a war whose sole benefit was to line the pockets of the Vice President?”  No, they didn’t. And it would have been a far more intelligent thing to say.

In fact, this morning, both parties are at pains to remember any occasion on which a presidential address was interrupted in such a manner.  This is not the British Parliament.  We do not have a system that encourages smart retorts in Congress (and, let’s face it, it’s more fun to watch it happen with British accents.  The Brits are so much better at coming up with deep-cutting nasty comments that sound perfectly reasonable on face value).

I keep coming back to this: it’s obvious that the political rhetoric in this country is such that the president has to keep proving his worthiness of being in the office of president … the one that he was elected to, and by a much more definitive margin than his predecessor ever received in two terms.  It’s like people just assume that he’s less than human and not fully American, and it’s up to him to constantly prove otherwise.

In more amusing news, a California state assemblyman from Yorba Linda, one of the true champions of pro-family legislation (that would be pro-conservative definition of family, natch), resigned after bragging to a colleague about an affair without realizing that his microphone was on and that his comments were going out on public access television and preserved on tape for posterity.

Not only that, but it seems that this was his second mistress.  He wasn’t only cheating on his wife — he was cheating on his other mistress, too.

So much for pro-family values!  Although, he did put his money where his mouth is: part of the bragging included the revelation that he didn’t use a condom.  So maybe he’s a true Christian™ after all.  God wants babies!  They’re delicious!

Food Porn

Changing tactics from my liberal ranting of the past 48 hours (I’ve lost two friends on Facebook … can’t figure out which ones, though.  It’s entirely possible that it’s the notoriously unreliable friend counter, but I prefer to think I’ve annoyed people), I’ve decided to go the food porn route.

I had a dinner party on Sunday.*  At the request of my guests, it was the long-promised Greek dinner party (that is, a dinner party where Greek food is served, not … well, whatever your mind came up with).

And so, let’s do some food porn!

Here was the menu:

Mezze course:

feta cheese
Greek and California olives
Greek pepperoncini
pita crisps
bissara (Egyptian fava bean dip)
hummus
grape leaves
tzatziki

Main course:

Pastitsio
Spanakopita

Dessert:

Baklava

As usual for me, I tend to wayyy over plan dinner parties, so I decided to cut out the soup course (it would have been lentil soup) because, well, there was too much food as it was.

So.  Food porn.

Thursday night I rolled the grape leaves.  The recipe that I used is from this book: Little Foods of the Mediterranean: 500 Fabulous Recipes for Antipasti, Tapas, Hors d’Oeuvres, Meze, and More.  I didn’t take any photos, you see, because it was a repetitive boring task, and the best way to deal with those is to drink while doing it.  Which means that I was a little … um, my hands were wet, and I didn’t want to hold the camera with wet slimy hands.

That’s my story and I’m sticking to it.

Friday night, I soaked the fava beans and garbanzo beans for the various dips, and made the baklava.  (If you need to see how that worked, just check out my last 12 of 12).

Saturday morning it was time to make the bissara and hummus.

Bissara is an Egyptian fava bean dip.  Egyptians use fava beans — fuul in the local parlance — in the same way that the people of “Greater Syria” use the chick pea (also: garbanzo bean, in Arabic both the legume and the dip that’s made from it are called hummus).  You find hummus, and its eggplant-based cousin (known more popularly as baba gannouj, although in Greek it’s melitzanosalata) in Greek food.  Oddly, although fava beans are all over Greek food, bissara is not found on the Greek table.  It is, however, one of the few parts of Egyptian food that I like (I love Egypt, but Egyptian food is never … ever … going to be the next great thing on the world foodie scene).  The recipe came out of the above book.

I chose to make it anyway (food porn above).  It’s fava beans cooked onions, garlic, cilantro, dill, mint, parsley, pureed, and then cooked again with coriander, cumin, and cayenne.  It was a decent hit.

I also made the hummus on Saturday.  I’d never made it with dried beans before (instead of cans).  I kind of liked the way it turned out.  The recipe came from Anne-Marie Weiss Armush’s classic The Arabian Delights Cookbook: Mediterranean Cuisines from Mecca to Marrakesh.  It has attracted praise from actual Middle Eastern people, so I hold it in high esteem.

Spanakopita.  Classic Greek mezze: spinach and various salty cheeses (feta, kefalotyri, and myzitra) in phyllo.  I made it Saturday evening.  This is my yia yia’s recipe, and it’s extremely variable — she wasn’t particularly the kind of cook who measured as she went.

And now, for the piece de resistance: Pastitsio.  It’s a sort of Greek lasagne.  Yia yia enjoyed the pastitsio, but she never made it, so I had to find another recipe to use (other than the one in the 1960s era cookbook I inherited, the one written before health care professionals started recommending against using lard and butter in copious amounts).

I used (and adapted) this recipe right here.  The taste is spot-on, however the white sauce that the recipe links to never actually set during the cooking process.  My guests didn’t notice, but I did.

Pastitsio (Greek Lasagne)

Here’s what you need:

  • 1 1/2 pounds of tubular pasta (in this case, I used Pastitsio #2, acquired from the local Mediterranean market.  You can also use ziti or straight macaroni.  Do not use elbow macaroni.  I will come find you and beat you with a wooden spoon.)
  • 1 cup of olive oil
  • 2 cloves of garlic, finely minced
  • 1 1/4 cup of chopped onion
  • 1 pound lean ground beef
  • 1 pound ground lamb
  • 2 cans diced tomatoes, drained
  • 1 1/2 teaspoons of ground cinnamon
  • 6 whole cloves
  • salt
  • pepper
  • 1 1/2 cups of grated kefalotyri cheese
  • béchamel sauce with cheese or basic béchamel

Sauté the onions until translucent in 2 tablespoons of olive oil in a large heavy-bottomed frying pan.

Add meat.  Cook until lightly brown, stirring to break it up.

Add the tomatoes, cinnamon, cloves, garlic, salt, and pepper and stir well to combine. Reduce heat and simmer until liquid has been absorbed, about 30-35 minutes. This is very important–the meat mixture should be as dry as possible without sticking to the bottom of the pan. Set meat mixture aside, uncovered, and allow to cool.

Preheat oven to 350F. Lightly grease a baking or roasting pan approximately 11 X 14 X 3 inches high. The height of the pan is actually very important–the sauce has to go on thickly.  It turned out that I didn’t have a pan high enough and so … well, I had to throw half of the white sauce out (although it wasn’t a major loss).

Boil the pasta, drain, toss with olive oil to keep from sticking together.

Now, your Greek mother who has nothing else to do … or your gay Greek dude throwing a fabulous dinner party to impress his friends with his cooking ability (which, given his inability to dance, dress particularly well, fix up his single straight friends with his other single straight friends, and his complete intolerance for shopping excursions longer than 30 minutes in length is pretty much ALL HE HAS LEFT) … will line up half of the pasta in nice, neat rows, and sprinkle it with 1/2 cup of kefalotyri.

Layer on the meat sauce.  Sprinkle with another 1/2 cup of the kefalotyri.  Line up the remaining pasta.

Make the white sauce … just not the one attached to the about.com recipe.  Find a recipe for bechamel and make it.

Pour the bechamel on top — this is why you need the pan to be 3 inches tall.  You’ll wind up with 1/2 inch or so of sauce that will puff up as it cooks.

Bake for 30 minutes.  Then rotate the pan 180 degrees, sprinkle on the remaining 1/2 cup of cheese, and bake for 15-30 minutes more until the top is golden brown.

Pastitsio is served warm, not hot — you don’t want to serve it right out of the oven.

Grape leaves and tzatziki.  I love garlic, but … well, I may have finally met my match on garlic.  10 cloves of garlic is a bit much for 17.5 ounces of Greek yogurt (also: 2 tablespoons of minced fresh dill and one cucumber, seeded, peeled, grated, and drained).

* OK, let’s get this out of the way: given my current record of promising and then delivering dinner parties, you need to have known me for at least eight years before you can expect to actually be invited to one.  So, no, you weren’t invited, and it’s not because I don’t like you.  It’s just because I haven’t known you for eight years yet.

Readin’, Ritin’ and Revivin’

There are some times that I am less OK living in Texas than others.  The passage of the state’s second Defense of Marriage Act was one of them.  I fear we’re coming up on another, and I feel like I should be able to do something about it, but I don’t know what.

It’s come to the attention of just about everyone that the State Board of Education has been taken over by a bunch of radical loonies.  These are the sorts of conservatives who make conservatives uncomfortable, and somehow they managed to take over the body that’s charged with revising and implementing educational standards at the K-12 level.  (Thank Bob it’s only K-12.)

This would be the same board chaired by a dentist (!) from College Station who came under fire shortly before the board’s final vote on revised science standards for endorsing a book that referred to supporters of evolution as “monsters,” “atheists,” and “morons.” I want to make it clear that the board currently leans in the direction that believes that if you ain’t their kind of Christian, you’re not a Christian at all.  (The fact that this is exactly the kind of logic that Osama bin Laden and his ilk use is the kind of irony that isn’t lost on me, but would be shot down as “totally different” were it brought to their attention.)

Earlier this year, a call went out for people to review the social studies standards.  As an historian who works with K-12 educators a lot in my line of work, I put my name in.  I didn’t get selected, and it didn’t take long enough to realize why.  I didn’t know that the SBOE member who represents my district had sent out an e-mail claiming that Obama was a terrorist sympathizer, and that an attack by said terrorists would take place in the first six months of his administration, followed by the implementation of martial law.  (Perhaps we should secede just in case?)

Clearly my passioned e-mail describing my committment to global competencies was a bad idea.

I know several people who did get appointed to the committees (two of them went with me to Egypt in 2005).  One of them, a University professor at a rival institution, was appointed to the economics review committee and managed to cause a horrific furor when he had the audacity to suggest that the term “free enterprise system” be replaced with “capitalism” in the standards.  “Capitalism,” after all, is what it’s called in every college textbook, and he thought that it would be appropriate for K-12 students to use the same terminology that they would use in college.  Why call the same thing two different names?

To say that this was received very badly would be an understatement.  As I was told later, when one of the SBOE members saw this proposed change, she stood up and screamed, “What kind of anti-American sonofabitch did this?  You should be ashamed!  I swear, whoever you are, if you were one of my appointments, you can consider yourself fired!”  (note: committee members are unpaid – it’s all volunteer work.)

My other friend wrote me to say that, while her committee was congenial, others were concerned that “too much attention” was being paid to the rest of the world at the expense of “our” history. Another friend told of how someone was appointed to her review committee–which was to oversee one of the years of world studies–whose sole purpose was to state over and over that he had moral objections to students studying other cultures.

For the record, Texas schoolchildren have two years of American history (grades 8 and 11), one year of government (grade 12), one full year of Texas history (grade 7), world cultures (6), world history (10), and world geography (9).  More than one board member has stated the desire to replace either the 9th or 10th grade course with a third year of American history, apparently being unaware that the 12th grade government course is entirely American history content.

It gets better.

After the first round of review committee meetings, the board cancelled the second round, apparently afraid that further anti-Americanism might ensue, so they’ve decided to appont an “expert panel” to guide the revision process.

First up?  David Barton and the Reverend Peter Marshall.

In his books and teachings, [David Barton] argues that separation of church and state is a myth and that America’s laws should be based solely on Biblical scriptures. His numerous claims include that the Bible forbids income and capitol gains Taxes. Barton’s views are so far right that even such groups as the Texas Baptists Committee and the Baptist Joint Committee have been vocal critics of his interpretations of history and the U.S. Constitution.

Even better: “Marshall has previously suggested that the California wildfires and Hurricane Katrina were divine punishments on society for the tolerance of homosexuality.”

TODAY comes the news that they’re considering LYNNE CHENEY for the expert panel.

Cheney is well-known for crusading against national history and social studies standards in the 1990s, calling the standards–which the National Endowment for the Humanities helped fund while Cheney was its chair–”grim and gloomy.” Cheney also denounced the standards as a monument to political correctness, claimed they gave insufficient attention to Confederate General Robert E. Lee and the Wright brothers and focusing far too much on figures like Harriet Tubman, and worried that they concentrated too much on embarrassing episodes in the nation’s history, such as the Ku Klux Klan and McCarthyism.

Outraged?  You should be.  The science standards revision made us uncomfortable by flirting with intelligent design–this will make us look like fools.  The next revision won’t happen for another decade, by which point our students will be the laughingstock of the country.

I still can’t tell what can be done about this twisted version of Evangelicals Gone Wild!  I’ve got half a dozen pleas in my inbox to help find real experts to testify before the SBOE, but it’s obvious they don’t care what people like us think.  If you live in Texas, write your state legislator–seriously.  The Lege is already moving to restrict the power of the SBOE after the science and English debacles.

I know that there’s probably very little that I can do about this … but I’ll feel better when it’s all over knowing I did what I could.

Random Round Up

It’s been a while since I blogged, and I know I’m falling behind. It’s that end-of-the-semester crunch time, and I’m actually making an effort to put the computer down when I’m not at work. (I didn’t say I was being that successful at it, but I’m trying).  In about a week and a half, classes will end and things should start getting back to normal.

However, here’s a random bunch of things that have happened recently about which I feel the need to express an opinion or one another.  (Perhaps I should call this post “Opinions by Chris™”)

1) Miss California needs to shut up now, thanks. You didn’t lose because you’re against gay marriage.  You lost because you’re an obnoxious chatterbox and no one can listen to you talk for more than 15 seconds without starting to bleed from the ears.  The reason why you can go on Fox NEws and talk about this at length is because everyone who works there is from outer space.

2) Perez Hilton needs to shut up now, thanks. There’s really nothing new there, but I just need to bitch slap HER down, too.  You run a blog.  This doesn’t make you famous or talented.  It does, however, apparently qualify you to go on Larry King.

3) Dick Cheney needs to shut up now, thanks. His term is up, and yet he’s still fearmongering all over the television.  No, Mr. Cheney, releasing the CIA memos on torture doesn’t make America less safe.  Kidnapping people from their homes, flying them halfway around the world and torturing them in secret prisons does.  Wanna know how I know this?  BECAUSE THAT’S WHAT THE TERRORISTS ARE SAYING, JACKASS.

4) GOP Leaders, please read the above.  Then shut up.  Thanks.

5) I still don’t care about Madonna and the Malawiian baby.

6) The financial bailout. I’m not sure Obama knows what he’s doing.  I’ll admit it.  I don’t think anyone else knows what they’re doing, either.  I do, however, wish that Fox News and a good chunk of the Republican party had a long term memory (it’s been FIVE MONTHS) and could remember that it was the Bush administration that approved the much-maligned AIG bailout that came with the million dollar bonuses.  We’re all in this together, idiots.  Stop blaming it on the Dems.

7) The Battlestar Galactica finale. I liked it overall.  Two things I didn’t like: the non-resolution of the Starbuck plotline (I’m sorry – Ronald Moore’s explanation that it’s “Whatever you want to imagine it to be” is LAME); and the hit-you-over-the-head robot sequence at the end.  For a series that worked entirely with subtlety, that was really annoying.  Also, his cameo at the end was distracting.  And I really want to be able to read what they produced for the fake National Geographic article because, yes, I am that lame.

8) Everything’s better with a bag of weed.

If I have to embarrass myself singing this as I walk down the hallway, so do you.  Bwa ha ha!!!

Lifestyles of the Straight and Hopeless

I realize that I neglected, in my not-terribly-triumphant announcement that I am returning to blogging more frequently, that I neglected to provide any details about Saturday evening.

Every so often, when I’m out in public, I observe the mating habits of that most intriguing of creatures, homo sapiensis heterosexualis, and I wonder–sometimes to myself, sometimes aloud–how it is that our species has managed to propagate itself as long as it has, given that, well, straight boys are just completely inept. Honestly. The survival of mankind as we know it depends on this??

I should preface this by acknowledging that Ray made what is not an entirely inaccurate observation about me. When I’m out in public, and I see someone who looks young, I tend to comment that they’re “twelve!” Ray gently pointed out that it’s not that they’re getting younger, it’s that I’m getting older. I prefer to think that it’s both, but whatever.

We started Valentine’s Day evening at a local wine bar, Cork and Company, where we had a couple of glasses of wine and some cheese. It was here that I had my first great revelation of the evening: I don’t know anywhere near enough lesbians. I like lesbians. In fact, it’s entirely possible that I enjoy the company of lesbians more than I enjoy the company of many gay men. We were seated at the bar (stupid me: it hadn’t occurred to me to make reservations at the bar that I planned to go to before dinner–this is why I hate Valentine’s Day!) next to a pair of lesbians. I don’t know if they were a couple or not, but they were a hoot to watch. They kept the alcohol coming, and they were no-nonsense, and god help the meandering soul who got a little too close to their space. They even managed to get the bartender to watch their seats for them while they went outside to smoke (Austin’s starting to make California look pro-tobacco).

On the other side of us was a young straight couple (me: “He’s twelve!” Ray: “He’s got three wine glasses in front of him. He’s clearly over 21.” Me: “He can’t possibly be shaving.” Ray: “You do know that he’s two feet away from you and can probably hear every word you’re saying, right?”). In all honesty, these were straight people who were significantly less inept than the others I observed later. She had on a nice dress; he was wearing a suit, and they seemed to be engaging each other in some conversation that prevented him from hearing (or at least acknowledging) the bitterly aging queen sitting next to them.

Then we strolled off to dinner. I had managed to secure late reservations at a Mediterranean restaurant called Taverna. They have a sister branch in Dallas that I’m convinced that I’ve been to, which is more Greek in style. The one in Austin is decidedly Italian. I kind of want to try the one in Houston just to see if it’s Lebanese.

Anyway, Taverna isn’t the cheapest place in town — it’s midrange, and I knew it because when I was spending a lot of Fulbright’s money last summer, I took a group of twenty there for dinner and earned a few frequent flier miles for it. I recalled that we enjoyed the food, and I thought it might be a nice place on Valentine’s Day.

Dirty business first: Ray had the veal parmagiana, I had butternut squash risotto with sea scallops. They were both good. Moving on.

There was another (presumably) gay couple sitting next to us. We decided that we were cuter than they were, and so that was that.

At my eleven o’clock, there was a young Latino couple. (Me: “They’re twelve!” Ray: “They’re not twelve. They have drinks.” Me: “They’re drinking soda.”) He was in a shirt and tie (no jacket), and a pair of loafers that had seen better days. He was slouched so far down in his seat that it was a wonder that he didn’t have to put his plate in his lap in order to eat. She was dolled up in a cute dress. I don’t know what the story was, but I tend to form judgments when, for example, it’s Valentine’s Day and the waiter hands the check to the woman and she pays. That’s just not right.

About halfway through the meal, another couple came in and sat at my nine o’clock. She was wearing a gray dress and had clearly spent hours getting ready. He clearly had not. He was wearing an untucked shirt over a paid of jeans and black athletic shoes. If I were her, I’d have left his sorry ass standing at the door. He spent the whole meal leering at her as if he was just going through the motions so that he could get to the part later where they have sex. Assuming that she didn’t dump him after dinner.

Which, of course, leads to the other thing I find weird about Valentine’s Day. You’re supposed to get dressed up, go out, eat a lot, have dessert, and drinks, and then … who still feels sexy after that? I felt kind of bloated.

But still. Every time I’m out in a formal setting, I tend to look at the straight couples of whom society approves, and I wonder … “How in the name of God have we not died out yet?” Because sometimes … it just doesn’t make that much sense.
